Eating the skin on fruit is just as good (for your health).

Darker colors in fruit skins have a denser concentration of flavonoids, according to one nutritionist. Flavonoids are the pigments that give plants their nutrients.  As well as various forms of cancer, these flavonoids can even prevent diabetes type II and I.

According to one expert, all fruits (and vegetables) belong to one of five categories of color.

·         Red: Apples, cherries, strawberries, tomatoes. These are high in lycopene which reduces the risk of cancer.

·         Blue/Purple: plums, blueberries. (Eggplant skin is fantastic!)

·         Green: Green apples, the sour ones. These are chewier with a tougher exterior.  Take kiwis, there is actually more flavonoids, more antioxidants and about twice the amount of fibre in the skin.

·         Orange/Yellow: Oranges and lemons, these are not just bartending secrets. The majority of the nutrients are found there in the skin. Add it to meat, the rind tenderizes as well as flavors such as in sauces and drinks. Take bananas, too. Though, I would not bite into a pineapple skin.

·         White/Brown: These are usually winter fruits. Pears which also fall into the green category have lots of fiber in their skin. Coconuts, bananas again, if you consider them white.
