Welcoming the new year, Coast Packing Company’s R&E Racing team and its ’69 Noonan Hemi ProCharger Pro Mod Camaro are greeting 2022 much as they did in 2021 – waving the flag for hearty eating,  centered around dishes prepared with lard and beef tallow at restaurants in towns along the two drag racing circuits.

To kick off the year, Coast Packing, the leading supplier of animal fat shortenings in the Western U.S., is unveiling #FatMap214, its gastronomic guide to good eating in the Dallas metroplex  (https://batchgeo.com/map/5d8b4bd78d7a2c6028e37c82e0725e48), highlighting more than three dozen local spots where fans can “Taste the Difference” that farm fats make in popular dishes.

Among the drag racing events to watch in 2022 are those at venues both familiar and new: U.S. Street Nationals, Bradenton Motorsports Park, in January; Duck X Lights Out 13, South Georgia Motorsports Park, in February; MWDRS 1, in March at Xtreme Raceway Park in Ferris, ; PDRA 1 at Galot Motorsports Park in Benson, NC, in April; MWDRS 3 at Tulsa Raceway Park in May; Yellowbullet Nationals at Cecil County Dragway in Rising Sun, MD, in August; Superchargers Showdown, at Maryland International Raceway, Budds Creek, in September; and World Street Nationals, Orlando Speed World Dragway, in November.

#FatMap214 in Fort Worth crosses cultures in palate-pleasing fashion. Pho District is a modern-day Vietnamese street food restaurant featuring Pho topped with crunchy pork fat.  Continuing the cultural tour, Esperanza’s Restaurant and Bakery is a Fort Worth institution out of the Joe T. Garcia’s Mexican Restaurant tradition – the go-to place for your refried-beans-in-lard fix.

Named for the ranch in the classic ‘50s film “Giant,” popular Dallas spot Reata started when a hungry west Texas rancher had a hankerin’ for some really great food; ask for the calf fries in lard and butter.  A Dallas favorite, Top Round Roast Beef offers hand-cut Idaho potatoes fried in 100 percent beef fat, while Terra, a Dallas unit of the Eataly chain, prepares Pane Otto with whipped lardo.  At Yardbird in Dallas, check out the chicken fried in lard.  Changing it up a bit, Dallas’s Proper Baking Company prepares authentic British baked goods, with lard in pastry crusts and beef tallow in mince pies.

Combining North and South American food, Asador in Dallas focuses on modern farm-to-fire cuisine, with beef tallow fries on offer.  At CBD Provisions, look for beef tallow tartine – tallow whipped into butter – on the dinner menu. At Uchi, the popular Dallas spot from Chef/Owner Tyson Cole — one of the few American sushi masters – dive into Hotate dayboat scallop, curry, lardo and Thai chimichurri.

Reflecting a true Texas vibe, The Mansion offers bison with root vegetables draped in lardo.  Ditto Manhattan Project Beer Company, where diners can sample fries and chicken in beef tallow.  And Burgundy’s sells Dallas’s largest selection of local pasture-raised pork and chicken, leaf lard and rendered pork and beef fat.
