The Edible Rainbow Launches Online Cooking Classes that can improve CVH Scores for Kids and Teens
7 out of 10 Children Have Poor Heart Health Scores
The same month that Northwestern University Feinberg School of Medicine published research showing that under 30% of children in the U.S. had healthy high cardiovascular health (CVH) scores, The Edible Rainbow announced immediate availability of Tasting The Edible Rainbow online healthy cooking class and afterschool programs that empower youth ages 10-19 with real skills to transform fruits and vegetables into deliciously addictive healthy dishes and then challenges them to eat a rainbow a day.
“Cooking is our passion, so we spend most of our time making delectable dishes using the color of fruits and vegetables as our guide for choosing ingredients. Our reward is delicious food that just happens to be good for us,” said Avis Beiden, CHEO (Chief Healthy Eating Officer) at The Edible Rainbow.
Promote Healthy Eating Habits
Many parents struggle to get their picky eaters to eat a healthy balanced diet and even if their child isn’t one of the 70% aged 2-19 with poor scores for cardiovascular health (CVH), it could be just a matter of time if their eating habits remain unchanged. According to senior author Amanda Marma Perak, MD, a cardiologist at Ann & Robert H. Lurie Children’s Hospital of Chicago and Assistant Professor of Pediatrics at Northwestern University Feinberg School of Medicine, “Individuals and families who improve their eating patterns can markedly improve their total cardiovascular health, even independent of weight change.”
The Edible Rainbow is all about eating colorful fruits and vegetables – Red is for Heart Health.
Eating a rainbow of fruits and vegetables each day isn’t just a great goal, it’s good for you too! The online healthy cooking classes at The Edible Rainbow highlight the health benefits provided by each color. For example, lycopene is one of those elements that has been linked to health benefits ranging from heart health to protection against sunburns and certain types of cancers and is also the pigment that gives red fruits and vegetables their characteristic color. The Edible Rainbow helps families improve CVH scores through healthy eating habits.
One way to improve your family’s CVH is to get more red fruits and vegetables such as: tomatoes, watermelons, and raspberries, in your day. Consider some of the ways The Edible Rainbow introduces them in delicious dishes such as: drizzling fresh tomato sauce over whole wheat pasta, adding dried berries to oatmeal, or roasted red bell pepper strips to a quesadilla.
Best practices for getting your kid or teen to eat more fruits and vegetables:
- Empower them to choose their preferred fruits and vegetables in each color
- Involve them in making family meals
- Encourage them to try new foods by setting a good example!
